Guacamole is the star of these Mexican-inspired poultry wraps from Robin Miller’s Robin Takes 5 (Andrews McMeel, 2011), so opt for a fresh, strongly flavored variety. At under 500 calories per serving, they’re ideal candidates for more of your favorite add-ons, too. Salsa, rice, and fresh chopped cilantro are good candidates, but let your imagination – and your grandkids’ – soar.
Ingredients:
4 taco-size regular or whole wheat flour tortillas
1/2 cup prepared guacamole
3 1/2 cups shredded or cubed cooked chicken (such as rotisserie chicken or leftover roasted or grilled chicken)
1/4 cup diced white onion
1 cup shredded Cheddar cheese, mild or sharp
Directions:
Place the tortillas on a work surface and spread the guacamole all over one side. Top each with the chicken, onion, and cheese. Roll up, tucking in the ends to make wraps.
Serves 4
